SOUP WITH PASTA SHAPES

- Calories: 265 per portion
YOU WILL NEED:
- 200 g/7 oz plain flour
- salt
- 2 eggs, beaten
- 40 g/1.5 oz Parmesan cheese, grated
- 1.5 litres/2.75 pints well flavoured beef stock
HOW TO COOK
- Sift the flour with 1/4 teaspoon salt on to a work surface and make a well in the centre. Add the eggs and Parmesan, then mix together to a smooth dough.
- Flatten the dough with a rolling pin and roll out to a 3 mm per 1/8 inch thickness. Cut into a 1 cm per 1/2 inch wide strips using a tooth-edged rotary cutter, then cut the strips into pieces 2.5 cm/1 inch long. Pinch each strip in the middle to give a butterfly shape.
- Bring the stock to the boil in a large pan, add the butterfly shapes and cook for 6-7 minutes. Serve immediately.
COOK'S TIP
The freshly made pasta shapes give this soup an authentic taste. Use pinking shears to cut the dough if you do not have a tooth-edged rotary cutter.
